You may have seen that I’ve been carefully cultivating a ‘Gardeners Delight’ plant! Kindly gifted to me by Perrywood Garden Centre in Tiptree, Essex, the plant is flourishing and is already bearing some promising green fruits.
The possibilities are endless with tomatoes so I’ve been pondering over tomato recipes for some ideas of what to do with my *hopefully* hefty crop of bright and beautiful tomatoes.
A punchy puttanesca? How about some shakshuka? Prepare yourself for some seriously lovely tomato recipes and ideas!
Here are 5 ways you can transform tomatoes into something even more wonderful!
Cradle your precious tomatoes in pastry peppered with parmesan. Whether you’re opting for heirloom tomatoes, roma or persimmon, pair with shallots, crumbled cheese and herb sprigs. Invite your friends over for brunch and the weekend is a winner!
Crack open the vodka and add the juice from your freshly-picked tomatoes. Splash in a drop of lemon juice and pour it straight onto cubes of ice. No Bloody Mary is complete without Worcestershire sauce and Tabasco so add 3-5 dashes. Sprinkle a pinch of celery salt and pepper, maybe even muddle it all together with a stick of celery.
Fresh tomato salad
This salad tastes like summer. Tomatoes, basil, sea salt and your favourite balsamic vinegar! Drizzle with some extra virgin olive oil. Feeling daring? Mix it up a little and replace with garlic oil.
Green Tomato Chutney
The ultimate combination of sweet and savoury! Make the most of any excess tomatoes from your garden before they go to waste. Take it from 0 to 60 by adding chilli, garlic and some ginger. Is your mouth watering yet? ‘Cos SAME.
Tomato, mozzarella and ravioli pasta
Scatter your tomatoes with some ravioli parcels and spinach in a tomato cream sauce – Add some ricotta cheese or opt for three-cheese ravioli to transform your Italian-style pasta dish. An ideal meal for your Meat-Free Monday!
